At Eastchester Middle School in Eastchester, N.Y., where Tom
Boissonnault teaches technology classes, the curriculum has evolved in
recent years. In addition to learning about design and engineering, Mr.
Boissonnault’s students are getting hands-on experience by restoring a
vintage Vespa motor scooter.
